BEHIND THE SCENES: Lifton’s Homemade Desserts

2 Feb 2018 17:11:54

We go behind the scenes and meet Lifton Farm Shop’s Karen & Tyler who as well as running the kitchen, are hugely passionate when creating and making all the fantastic home-made desserts available in the restaurant.

“It’s my favourite part…I love doing desserts” Tyler

Karen’s dessert inspiration is driven by her experience and knowledge of the regular customers and predicting what farm shop delight they would like after their Sunday roast.  This may include her warm sticky toffee pudding in the colder months or heavenly lemon meringue pie in the summer. However, it’s not quite that straight forward as she also has a lot of regular customers who enjoy trying something new each time they visit and this gives her a creative challenge to put together flavoursome and unique desserts that will really make them go outside their comfort zone including her Jammy Dodger cheesecake! Her passion doesn't stop there as she also finds herself trying new and wonderful ideas at home to bring to the restaurant, quite often inspired by Bake Off or MasterChef.

“You won’t find a fresh strawberry in our desserts in January because they’re not available on the farm” Karen

Karen & Tyler only use the farm shop’s produce or locally sourced ingredients such as Rodda’s cream and Trewithen Dairy’s milk. This means the dessert menu is always seasonal with fresh strawberries & raspberries in the summer and orchard fruit a focus in the autumn. During the winter months they use the fruit that has been frozen from the growing season. Using the farm’s fresh produce really makes a difference to the desserts in terms of their appearance, texture and of course taste!  Every dessert made has its own top-secret recipe dedicated to the Lifton Farm Shop Restaurant.

“Crumble is popular all year” Tyler

Crumble, junket & pavlova are the restaurant’s most popular desserts throughout the year. So, we asked Karen & Tyler what are their favourites?

Karen “Chocolate Raspberry mousse slice… it’s layers of raspberry mousse and chocolate sponge with my own special raspberry glaze on top. The feedback from customers is always fantastic”

Tyler “I love brownies, chocolate orange ones and white chocolate with raspberry brownies. I just love them. They’ve got to be served warm with our home-made ice-cream for me”

Specialised desserts can always be catered for so if you have a favourite just give Lifton Farm Shop a call and they will happily make it for you!  Together with Karen’s creative ideas and knowledge and Tyler’s composing and preparation skills we have a truly marvellous dessert team with the proof quite literally being in the pudding!

“When you’ve had a really busy lunch time and it’s been hectic it’s just really nice to go out to the kitchen and relax doing the desserts” Karen

  • My family and I visited last Sunday for the roast dinner and all I can say is wow.

The portions were generous and there was plenty of meat, on both the small and large plates, and a good selection of veg. Everything was cooked perfectly and it was piping hot… There is also a great selection of desserts and the apple pie was delicious.
